About Cannelle Et Vanille



I am Aran, a Basque ex-pat living in the US since 1998, and this is Cannelle Et Vanille, my baby, my blank canvas for creating anything and everything sweet that comes out of my heart. Why the name Cannelle Et Vanille? Because those are the smells and tastes of my childhood and this blog is very much filled with nostalgia.

I am a mother of a boy and a girl who keep me busy and a freelance food writer, stylist and photographer. This blog is a journal of all my recipes, travels and life stories.

I am also working on my first cookbook that will be published by Little, Brown & Company in the fall of 2012.

FREQUENTLY ASKED QUESTIONS

After responding so many emails about the same topics, I thought it would be a good idea to add a FAQ section. Hope this answers some of your questions...

I am looking to buy a new camera and I like your photography. What camera do you use?

I think which camera to use depends on many things, mainly how you will be using it, what you are trying to achieve with it and of course, your budget. I started with a Canon Rebel XT, went on to a Canon 50D and now a Canon 5D. I think the Rebel was a great camera, but I do love my 5D.

Where do you get all those lovely props?

I have a tableware and prop addiction and I might just have to rent a studio just to store all of my things. Lots of my dishes are from Anthropologie, Lekker, but some of them are also from back home. There is a hole in the wall hardware shop in Bilbao that always surprises me with little cool things.

Why do you always use grams?

I'm European and that is what I am accustomed to and also, all the professional kitchens I have worked in have used grams. If you would like to convert grams to ounces, all you have to do is divide the grams by 28.375 and that will give you he ounces you need.

Can I send you my products so you can review them in your blog?

I don't do product reviews in my blog. Sometimes, there might be something that I love and must share with you but never paid and always my initiative. The same applies to event reviews or cookbook reviews.

I am interested in advertising on your blog. Do you have any ad spaces open?

For a long time, I wanted this to be an ad free space, but a couple of months ago, after really looking at all my possibilities, I decided to become part of Martha Stewart's "Martha's Circle" and PlateFull. I am very happy with them at the moment and do not have any other ad spaces available.

Can I write a guest post in your blog?

This blog is a personal journal of my recipes, photographs and stories and I want to maintain it that way, so no, at the moment I do not have guest bloggers.

Can you do a guest post in my blog?

I have done some guest posts in the past, but right now I have no free time really. You might see me over at a friend's blog at one point or another, but that will be rare. Maybe when I have more time.

Can we exchange links?

I love sharing my favorite links, websites and blogs, but I don't systematically exchange links. I need to get to know it and love it. I hope you understand this.

Do you sell your baked goods anywhere?

No, I don't. I do some catering at times so contact me if you have anything in mind although I might not always be able to accommodate your request.

Do you teach baking, styling or photography classes?

I am happy to say that I am starting to teach food styling and photography workshops again now that my kids are a bit older. Please check the blog for updates and upcoming dates.

I have tried your recipes and they don't work the way I wanted them to work. Can I contact you to ask specifics?

Actually, I love those kinds of emails. Some recipes are more temperamental than others so if you are having problems, email me and I will do my best to help. I am very good about that.

Where did you go to school to be a stylist and a photographer? How can I get into this field?

I might not be the best person to answer this question. I went to university for business and economics. Even received a MBA, but then switched to culinary. I attended culinary school and worked for different restaurants and hotels. I am a self taught stylist and photographer. My advice is to find a photographer/stylist you admire and try to assist them. That's the best way to learn. And practice, practice, practice.

Why are all your recipes gluten-free?

In December of 2005, I was diagnosed with Hashimoto's Thyroiditis and in 2009, I developed Meniere's Disease (or Autoimmune Inner Ear Disorder, not certain). I started reading about the benefit of a gluten-free diet for people with autoimmune conditions, so in late 2009, I started living gluten-free. In April of 2010, after exhaustive testing, I found out I have genetic gluten sensitivity, which seems to be the cause of many of my health issues. I have been living strictly gluten-free since then and will be this way for the rest of my life. All my symptoms have disappeared.

How can I convert your gluten-free recipes?

Most recipes are a simple conversion. Add all of the gluten-free flours and use regular all purpose wheat flour instead, but if you have any questions, don't hesitate to email me directly.

Why do you moderate comments?

I didn't moderate comments for a long time, but after a series of anonymous comments and lots of spam, I decided to moderate them. I do not mind criticism. I welcome it, but you must be upfront about your identity and not hide. This is not the place for rants, unload frustrations or sell products. I want to keep it open, but I will not tolerate mean spirited comments and cowardly behavior.

I am a professionally trained pastry chef but photography is something that I just learned as I went along when I started the blog 9 months ago. Hello there, Aran! I've been reading your beautiful blog for a while now(and drooling over your creations!) and wondered if you or your family had a recipe for buñuelos con crema? They're like profiteroles with custard inside. I used to eat them every day when I lived in Salamanca but can't find a recipe anywhere :(

Hi there Aran! We (I'm speaking for both myself and a dear friend) are more than overjoyed to stumble upon your blog.

You say you live in Florida, but (and this may seem to be an ignorant question) do you have a pastry shop here? We know that making your decadent goods will be tasty, but we both agree that it'd be best if we could try from the expert. I just want to know so that sometime, if I'm near the area or we have a roadtrip, we can stop by.

You don't know how much you've inspired us to bake again, and though it be only a hobby for us, we really admire the recipes you've made and the photos you've taken. I'm certainly going to try making a mille-feuille from scratch!

I am a professional pastry chef but I have switched gears a bit and I'm dedicating a bit more to food styling and food photography now. Having a pastry shop is a dream but requires so many resources, time and dedication... So maybe one day. Thank you for your comment. It made my day!

your photos are plainly awesome. We have lot of Sweets& Cakes mags here in Germany but most of the times those have recipes nobody can follow and when you mess up there´s no one you can ask. And... well, I wouldn´t say the photos are bad, but I would love to see some of your recipes and photos in there.
Why don´t you do a book with your recipes? (I couldn´t find any book here so i´m asking... :) ) I´m sure any publisher specialized on food would be happy to get a book with your recipes/photos.
... not to mention how happy *I* would be ^^

Hi my name is Rachel, and first off I have to say I love your blog! The photography is really great the food always looks so delicious. I myself am a student of photography, and have recently begun to take an interest in food photography. If its not to much to ask, I could use a few tips. Its much harder than it seems. I would love to know, what lighting you use, and what equiptment, if its not too much.

Rachel- I really don't consider myself a food photographer. I manage but I am more a food stylist/pastry chef. My gear is very simple, a Canon Rebel XT with a Sigma 50mm macro lens. I only use natural light that is available in my living room in the afternoon and I use foam board as a reflector. And that is it really. I just have learned to find the best light available and I always shoot in manual to get the right exposure. I wish I had more tricks to share but I'm afraid it's about practicing. I have only been doing this for a year and I am all self taught! Thank you very much!

I love your food and your photos. I am also studying and learning photography. I was wondering (if you don't mind) if you could tell me how you get all white background and foreground, it is like high key. I love it, do you use a light source or is it natural light and if it is natural light where can I find light like that?

NahmMond- thank you very much.

I only use natural light. Window light is the best. Avoid direct light or try placing a sheer curtain in the window to block some of the direct sunlight.

To get bright whites, shoot with a high aperture, make sure the white balance in your camera is set to the right category and try to overexpose the photo a bit. Not too much, just a little.

When you say high aperture do you mean wide and small number?
And if I reduce the normal sugar not the icing sugar in the macarons recipe would that affect the viscosity of the meringue? Will it turn out okay if I reduce the sugar, I really don't like them too sweet.

NahmMond- high aperture as the smallest number it will go. that depends on the lens. if you reduce the granulated sugar, the meringue might not be as stable but i think you will b able to do it. try it and let me know. thanks!

Hi Aran, it's me again
I tried out the pistachio macaron recipe and i half the granulated sugar and it turned out fine. It didn't look good because I need to learn how to pipe them in perfect round shape but it tasted really good. And to day i went to Laduree - I live in London so there is one in Harrods and I live quite close to there so I go there quite often to get some macrons! Today I found 3 new special flavours for spring: Chocolat Cidret - Chocolate lime, Chocolat Passion fruit, and chocolat cerise - cheery chocolate. It was very pretty, them were brightly coloured with shredded chocolate decorated on top. It came in a bright yellow box with little birds and chicks on it for spring. It was so adorable. Sorry for blabbering but I hope this give you some ideas for flavours!

Oh sorry about this but one more thing, if you are making varieties of flavours for macarons you are limited with fruits because we can't use the puree, they have to be dehydrated, and I was thinking if it is possible to use those fruit teas, you know the one that are very weak meaning not bitter and are very rich in fragrance. From what I know the shells of the macarons are usually rich in scent not in flavour but the ganache or what ever the filling is is more the influence of the flavour. Just another idea because I think it is possible but i'm no cooking expert. If it is possible, you could do a guava flavour or very rich orange and lemon scent instead of just the zest. Because these fruit teas when you put in hot water, they don't really taste like tea, they are more like hot fruit juice!
I would love to hear your ideas..

NahmMond- That could be. Also extracts and oils work well and can be added once the meringue is fully whipped and at the same time as adding the food coloring. Glad you liked the macarons. Piping takes practice but you will get there!

Carina- Thank you very much. You are too kind. I have worked in many different restaurants and my grandparents and now uncles and cousins own a pastry shop, but I've never ran a restaurant myself. That is really hard work and BIG commitment. Thank you though!

Mind if I ask you about the photos? They have the best ever tone I've encountered so far. The flickr group of Natalia's presets have yout phhotos in it, do you use them all the time, the presets? These pics are just amazing, they have the right tone, so bright and vivid yet not tacky at all. How did you do that????

I just came across a flickr group called Sweet Treat that has your foodie pics in it. I'm sorry, Natalia is the name of the lady that invented the Sweet Treat Lightroom Presets and Actions. Wow, I am impressed. Just searching for Basque food as I'm preparing my wife for a trip of a lifetime to Spain. Interestingly, to the Val d'Aran to experience Aranese style food. I'm also aware there are some places that serve Basque food in the Aran too. Wife is not a seafood lover which I know is very popular both in Catalonia and Basque Country since one borders the Atlantic Ocean and the other the Mediterranean Sea. But I can sell her on the Basque desserts/pastries with your works of art. The desserts look absolutely delicious and dangerous for weight watchers.

Julia Isabelle- i went to culinary school in florida at the florida culinary institute, now called Lincoln Culinary. I'm not sure culinary school is for everyone. I'd suggest working in a kitchen first before signing up. It's a big commitment. If you still choose to go, then you should go for the best like CIA, FCI and for pastry, the french pastry school. Work while you are going to school and only work under the best chefs. you will have to knock on a lot of doors and get low paying jobs and work long and odd hours, but it will be all worth it at the end.

there are other careers in culinary as well. it's all a matter of what you are looking for. that's why i suggest you work in a professional kitchen first to see if that's what you want.

I love your blog the food of course but mainly the story behind the food. When I first discovered you I was intrigued by your gluten-free diet. I have since read about how gluten can affect you and I think I may be gluten intolerant. I do not have any symptoms of immune disorder, I don't know if acne qualifies as such. However I have battled fatigue and depression for a long time. Can you recommend books you have read that helped you diagnose your condition? By the way it's good to have your talents in Miami.
