Goodbye to Autumn with a Green Apple, Caramel and Milk Chocolate Mousse



Even though I live in an area where the changes in season are very mild and rarely apparent, I love to celebrate it and reflect it in whatever I am doing. We will be entering the winter season in a couple of days and I am having visions of white snow, branches and icicles just like all these flickr favorites that I have been bookmarking lately... I dream of one day spending winter solstice in Iceland.




My parents left this week leaving me a bit in shambles. It always takes me a few days to get adjusted to not having them around. It is always bittersweet. I made these bavarian mousse cakes for their going away dinner with some caramel cake and layers of green apple, caramel and milk chocolate bavarian. I promise to give you the recipe soon, but with all the holiday prep and organizing for our coming trip, I misplaced the sheet of paper where I wrote it all down. Soon, I promise.

Ohh...I know how it feels when parents come to visit and then go away again. Always takes a few days of getting used to...

Your cakes are beautiful!! What are those dark little fruits with stems still attached to them? I'm sure your parents were very happy with them!!

Oh, and I can't believe you have the intention to spend winter in Iceland!! Never for me, thank you very much. -20 degree Celsius was the coldest I have been, and I don't like it one bit!! Though I'd do anything for a traditional white American Christmas like those ones in Disney family movies...

We said goodbye to Fall awhile ago. We definitely have seasons as I have about 5 inches of snow outside right now.
As alwalys you have created a beautiful dessert that no doubt tastes as good as it looks.

Christy- the little dried berries are from a berry tree that is right outside my house. It is now completely brown but in the summer it gives these dark green and red berries (never attempted to eat them). I just thought they complimented the mood I was trying to convey. And yes, I'd love to see the shortest day of the year in Iceland!

ahk so perfect and little and round! iceland eh, i would love to go too! but as for living in snow...hmmm i might like it if it wasn't extreme. Right now the snow is level with my porch...it's crippling, it shuts things down, people are going crazy...4 feet and rising. boooo.

This is such a wonderful combination of texture and taste!
How did you get all the layers to smoothly level out when working with a ring mold? I always have the most difficult time getting all the layers lay out evenly!!! As usual, your creation always fascinates me!

Anonymous- bavarians are pretty runny at first so once poured into the ring mold, they spread well. Freeze after each layer to set it well. Good luck!
