Quinoa Pudding and a Walk on the Beach

I have talked about my love for arroz con leche many times in this blog. It is one of the desserts I make the most and the one that my friends always request when they come over for dinner. “Arroz con leche with two galletas please”, says our friend G. Galletas Marias that is.

Lately I have been experimenting with different grains, mainly because of health reasons. Each one of my pregnancies has taken a bit of a toll on my body and I believe nourishment and food is one of the main ways to bring it back to balance. So a couple of weeks ago, I decided to make a different version of my favorite dessert by incorporating quinoa into it.

The weather has been gorgeous and last Friday, after we dropped J. off at school, we went down to the Juno Beach pier for an early morning walk. It was windy, the sea was rough and it was a pleasure to watch the surfers ride the waves. We even spotted a swimmer in that crazy ocean and there was even a “danger: sharks” note on the blackboard.

We skipped breakfast that morning so we could have a small picnic at the beach. I made a small batch of quinoa pudding the night before, packed some strawberries and some pistachio and millet tea cakes that I had put away in the freezer. No walk on the beach is complete without snacks right? The wind was too harsh and it spoiled our picnic plan a bit. Instead we ended up sitting at the tables in the parking lot… but we enjoyed it anyway.

Quinoa Pudding with Macerated Strawberries and Pistachios

I like mine a little bit more liquid. If you like a drier version, omit the heavy cream

makes about 4 8 oz servings

3 cups whole milk
1 cup heavy cream (optional)
1 vanilla bean
1/4 cup sugar
pinch of salt
1 cup quinoa

1 cup strawberries, diced
1 Tbs sugar

chopped pistachios

Place the quinoa in a strainer and rinse it with cold water for a few seconds.

Combine the milk, cream, sugar, salt and vanilla bean in a medium saucepan and bring to a simmer. Add the quinoa and stir. Reduce heat to medium low, cover the pot slightly, and cook for about 30 minutes stirring every few minutes. If skin starts to form on top of the milk, just stir it back in. The milk will reduce and thicken. Ladle into bowls or jars.

Place cut strawberries in a bowl and sprinkle them with sugar. Toss them and let them sit at room temperature for about an hour until juices start to come out.

Top the puddings with the strawberries and chopped pistachios.

    Wonderful idea! I’ve recently started making quinoa at home after tasting it at various restaurants and loving it. Never did it occur to me to make it as arroz con leche, which I happen to love as well. I’m adding this to the quinoa recipes I’ve been collecting.

  15. karine- for arroz con leche i use much more milk than with this one. i also added heavy cream to thicken it some more.

    Lynette- quinoa is a grain the size of couscous. it has a rich earthy flavor and when cooked it has firmer texture than rice. there is black, white and red quinoa although i have never cooked the black one.

    Anonymous- it is lemonade with thyme in it.

    I like the look of that pistachio and millet cake, what a lovely shade of green! I never thought about putting something like quinoa in something like a pudding, but I suppose in makes sense, as it adds a lovely texture. I love it!!

We had snow again yesterday and even though the sun is shining and sparkling I am ready for winter to be over. Love the quinoa pudding idea. I bought quinoa but haven’t used it yet. I am actually wondering how it might work with soy milk… I make rice pudding with vanilla soy milk and it is SO yummy (and safe for my lactose sensative family)!

    Aran, I love your blog and you bring so much beauty to the world with your food and your photos… I’m sorry to sound in any way off, but I have to ask you: please don’t carry your baby facing forward!!!!!
    The forward facing carry in any baby carrier places pressure on the pelvis and spine. When your baby is facing forwards with legs unsupported, the baby’s back is essentially arched instead of rounded. The center of gravity is different which makes the carrier tend to compensate when walking as well. Some sites that sell baby wraps and carriers advise you to only use this hold for a limited amount of time and that no developmental damage will occur if the baby is not placed in this position for hours on end. I believe that any pressure on little developing hips and spines is undue. Moreover, all the weight is essentially in the baby’s most sensitive place. When your baby is facing forward his legs as well are not supported. Your baby’s legs should be pulled up to a ninety degree angle. This is possible only if the fabric covers the whole back of the thigh, virtually up to the backside of the knee. It also does not provide good head and neck support, which is most desirable when your baby falls asleep. Of course it is nice for your baby to be able to see the world. However, in the front carry your baby can’t turn away if the environment becomes too overwhelming. You cannot see your baby’s face and it’s tougher to read your little one’s cues. It’s not a good position for either mom or baby.

    We have a favorite rice pudding shop in our neighborhood in San Francisco, and they always have great flavors – pumpkin, nutella, lemon, creamsicle, etc. I was wondering if you had any input on adding flavor to your quinoa pudding.

    I’ve made it twice now and my boyfriend always fights me over the last serving!!

    I’m in college in Boulder, Colorado, going to a school of mostly vegetarians and vegans. When it comes to time for dinner parties, I have to be very clever with the dishes I decide to create! I made this beautiful recipe with soy milk as a substitute. I loved it from the very beginning, but I was worried about the teenage, picky boys that would be tasting it…needless to say, they gobbled it up before most of us could get a spoon in! Delicious!

    I have made this 3 times since your post as my husband loves it! Last time I substituted ½ the Quinoa for Amaranth and topped it with Blue Berries and Raspberries.
