A Bob’s Red Mill giveaway and a few recipes to go along with it

I am really excited about today’s post as I am sharing some of my favorite recipes I have been cooking these days and…

I am giving away 25 boxes of Bob’s Red Mill gluten-free flours!

Now, I hope this gets you to get into the kitchen and bake some more gluten-free recipes.

So what do you say?

Inspired to bake?

It is not unusual for me to be baking in the kitchen. After all, that is where I feel most comfortable and where our family gathers always.

After a bout of feeling uninspired this summer, I returned from France with a big desire to test new recipes.

Autumn recipes always miss home and my family. The fresh Dordogne country air and the cooler temperatures made me crave apples and squash and soup… lots of soups this week.

So here I am sharing some of my favorite recipes this week.

Apple, oat and herb scones that I served with squash and leek soup – the porrusalda of my childhood as I blogged about it.

Hearty and lots of texture that accompany the creamy soup perfectly.

There were brown butter apple cakes flavored with cardamom and vanilla bean. Jon and Miren loved them with the lady apple slices on top. Miren actually took some of the apples to school for “show and tell”. She was smitten by them.

You could even grate the apple into the batter. It is a very forgiving recipe and it would be great with a bit of the apple moisture in it.

And I also made the striped-beet and caramelized fennel tart that is featured on the cover of my book (individual size this time). Ossau-Iraty cheese inside instead of the raclette that the original recipe calls for…

… but so good regardless.

Savory apple, oat and herb scones

makes 16 scones

1 cup (140 g) brown rice flour
1/2 cup (50 g) almond flour
1/3 cup (40 g) millet flour
1 1/3 cups (140 g) GF oats
2 tablespoons light brown sugar
2 teaspoons ground chia seeds
2 teaspoons baking powder
3/4 teaspoons baking soda
3/4 teaspoons fine sea salt
1/2 teaspoon black pepper
1 teaspoon finely chopped rosemary
1 teaspoon finely chopped parsley
1 teaspoon finely chopped thyme
12 tablespoons (170 g) unsalted butter, frozen
1 cup lady apples, diced into small pieces (you can use other apples but try to use those with not too much moisture)
2/3 cup (170 ml) cold full-fat buttermilk
Heavy cream for brushing

Preheat oven to 400F (200C). Place butter in freezer for at least 30 minutes before making the recipe.

In a large bowl, whisk together the first 13 ingredients. Grate the frozen butter into the dry ingredients using the large holes in a box-grater. Toss gently with your hands without warming the butter too much. Add the diced apple and toss to coat. Add the buttermilk and mix until combined.

Transfer the dough onto your work surface and bring it together. Dust the surface with a bit of flour if needed. Roll to 1-inch thickness and cut 2-inch circles using a cookie cutter (dip the cutter into brown rice flour so it doesn’t stick to dough too much).

Place scones on a baking sheet lined with parchment. Brush tops with heavy cream and sprinkle a bit of black pepper and more herbs on top. Bake for 18 minutes until golden. Let them cool in the pan for 10 minutes before trying to pick them up.

Apple and cardamom brown butter cakes

makes 10 small cakes

6 tablespoons (90 g) unsalted butter
3 cardamom pods, cracked
1 vanilla bean, split lengthwise and seeds scraped
1 cup (100 g) almond flour
1/2 cup (60 g) GF oat flour or brown rice flour
1/2 teaspoon baking powder
1/4 teaspoon fine sea salt
2 eggs
1/3 cups (70 g) natural cane sugar
1/4 cup (60 ml) whole milk
2 lady apples, thinly sliced

Preheat oven to 350F (180C).

Melt the butter in a small saucepan and cook until milk solids are brown. Set aside. Add the cardamom pods and vanilla seeds. Let steep for 10 minutes. Then remove the pods and pour into a clean bowl.

In a medium bowl, whisk together the almond flour, oat flour, baking powder and salt.

In a small bowl, whisk together the eggs, sugar and milk. Pour the wet ingredients into the dry ingredients. Whisk to combine. Fold in the cooled browed butter.

Pour the batter (3/4 of the way up) into your molds that have been previously greased. Top with a couple of thin slices of apple.

Bake the cakes for 18 minutes or until golden brown on top. Cool and remove from molds. They are best eaten while warm.

    I just introduced my niece to Bob’s last weekend. Her husband recently realized he’s gluten intolerant and she made her first gluten-free pie crust with Bob’s flour. And she was able to find it in NJ!

    Thank you for the giveaway!!! I have two, young children both diagnosed with Juvenile Rheumatoid Arthritis (my daughter is almost 7 and has been living with this disease since she was 15 months old; my son is now 5 and was diagnosed when he was 3). We have had GREAT success controlling my son’s arthritis through a gluten-free, dairy-free diet – he is “arthritis free” as long as we stick to the diet. We are doing the same for our daughter, but it is taking a little longer to get her arthritis under control….but we remain hopeful!

    All this to say, I bake ALL of their treats, cookies, cupcakes, breads, etc. using only Bob’s Red Mill flours. Tastiest (and healthiest) snacks around! Yes, it is tricky using multiple flours, but so worth it to have healthy kids.

    My husband has recently been diagnosed with Sarcoidosis, an immune system disorder. Most sarcoid sufferers are prescribed Prednisone which has a slew of negative side effects. My husband has chosen not to take Prednisone and instead address his condition holistically.     Aran, I was intrigued so I had to make Time to give a try to the scones they were delicious SO moist made them using superfine Brown rice and a gala Apple I found them a little bit more on the sweet side maybe it is because I did not used laddy apples who are more acidic I even made the porrusalda and really really enjoyed both perfect comfort food to start this new week! Thank you for sharing

  483. Have you tried apple bread or rolls? Make a batch of bread dough, roll it out in a rectangle about 1/2 inch thick, spread apple filling, and roll up like cinnamon rolls. Cut it into rolls or bake it in loaf pans for apple bread. For an added yummy kick, make butterscotch rum glaze (brown sugar, butter, rum and cornstarch or other thickener).

    I just want to say that your story, your blog and your beautiful gluten free creations are so very inspiring and dear to my heart!

    I had early onset psoriatic arthritis in my teens, but was not yet diagnosed. At the age of 19 the pain became unbearable. I was covered in rashes, I couldn’t walk and I wanted to know what was going on with my body. I started searching for answers. After going to a few doctors, a Rheumatologist diagnosed me with my auto immune disease. He said that due to the severity of my disease that I most likely wouldn’t walk by the age of 30, he gave me nasty pills with horrible side effects and he sent me on my way (momentarily defeated and deflated).

    I wanted there to be another solution… Thanks to my incredibly wonderful and supportive mother, I found an acupuncturist/holistic healer who helped me immensely! I learned the connection between diet and auto immune disorders, and since then I have made conscious changes to better my quality of life. I had a decade of ups and downs (being on strict diets in my 20’s wasn’t always easy for me), but something changed for me in my thirties. I learned the importance of moderation and being gluten free not only became easy, but it became empowering! Also, a lot has changed in 12 years! People are much more aware and understanding of food allergies and intolerances and there are so many great GF products and flours available today!

    I’ve worked in the restaurant industry for years, I am incredibly passionate about food and wine and there’s nothing more satisfying than making something delicious and good for you! My journey to love myself and listen to my body has been an interesting one and I’m ready to share it. I do hope however, that I haven’t over shared. I just wanted you to know how much you doing what you do impacts other peoples lives. You are astonishingly talented and inspiring, and as long as you are creating, I will be following. Can’t wait to try some of the new recipes and get a copy of your stunning book!!

    On a side note, I’m turning 33 next month and I’m pretty darn happy and healthy! Cheers!

    These recipes look so inspiring. I am gluten sensitive and have yet to try baking with all these different flours. I do love to bake. My habit for years was to bake a pie every Sunday. Then I became ‘calorie sensitive’ which was later followed by the discovery that I am ‘gluten sensitive’, so Sunday pie baking came to an end. I am now inspired to bake and can’t to try some of the soups. Thank you Aran!

    I made these scones today to go with our Minestone Soup for lunch. The flavour was delicious however the scones didnt hold together. They fell apart when I tried to cut one in half. All that were consumed broke into crumbles. How can this be avoided. What am I doing wrong?

      Hi Amy,

      The scones are crumbly but they shouldn’t just disintegrate. I have been hearing from people about that happening to many of my scone recipes and I think the issue might be the type of flours and how gritty they are. Did you use superfine brown rice flour or regular brown rice flour? There is a big difference in texture between the two and I think that could have been a factor. Also perhaps if the dough was kneaded enough. Also, did you use chia seeds?

      I say that if you cannot get your hands on superfine brown rice flour, then it might work to add about 1/4 tsp of xanthan gum in the recipe to bind it a little bit more.

        Thanks for your reply. I used normal ground rice flour, not superfine. I cant find it here in the shops. I also substituted the Chia seeds for ground Flaxseed as I didnt have that on hand. But that shouldnt have been the problem. We had a couple of scones again today for lunch that were left over from yesterday and they seemed to hold together a bit better today. Maybe they were too fresh? I even waited 20 mins before serving them after removing from the oven. Next time I will try adding 1/4 tsp xantham gum. Thanks for your speedy response.
