Cherry tomato, prosciutto and ricotta fritatta

I am back from my summer travels to Europe and an amazing workshop in New York. More about those later.

For now, I wanted to share a simple frittata dish with you. I cooked this cherry tomato, prosciutto and ricotta frittata for my friend Jocelyn Casey’s site The Little Room of Style – a little collaboration who have started where I will share some of my favorite breakfast recipes.

I love breakfast and my head is always spinning with new concoctions. Stay tuned.

    Aran, I’ve been reading and enjoying your blog for more than 8 months now, and I’m learmning from your food photography approach. However, my day work has been very hectic and I only now could write. I’m currently on a 6 week vacation stay in the South of France, very close to a farmers’ market, enjoying fresh produce every day. Will make this fritatta tomorrow for lunch!     Aran, I’m back:-) I did it; used organic goat cheese; fresh and soft (instead of ricotta); also, gave it a little bit of grean by adding basil leaves on the top when serving. Was soo delicious! Simple and memorable meal! A big hit for the family: my child loved it!
