The raw beet ravioli

We walked home from the pool under the scorching sun and all I wanted was a refreshing salad.

I opened the refrigerator door and stood there for a minute with my eyes closed. “This feels like heaven” I thought, then looked at the abundance of vegetables we had brought home from Fig & Fauna on Friday.

I have to tell you all about Fig & Fauna. The most beautiful farm. The chickens, yellow carrots, the bees, watermelon radishes, goats, eggs, the white strawberries I missed…

In the meantime, you will just have to watch this video that Tiger in a Jar made about the farm.

And soon I will tell you about these raw beet and goat cheese ravioli.

  10. Just made some raw beet ravioli last week and they were a hit! While mine certainly didnt look as beautiful as yours do they do taste delicious! Added some fig balsamic vinegar and this new pineapple basil I found at my local farmers market…. so exciting! Looking forward to trying your version :)

    I’m sorry, I’m raw beets just do not eat .. :) Cooked beetroot is combined with vegetables
